Tips on making the Best Texas Sheetcake Cookies

  • Do not over mix cookies. Only mix the batter until just combined. Over-mixing will leave the cookies dense, rubbery, and not at all as they should be.
  • Use a cookie dough scoop to ensure each cookie is the same size. This will keep things baking evenly and prevent burning, overbaking, etc.
  • The dough will be thick, that is okay, and the cookies will still turn out great!
  • Whisk the cake mix before adding the wet ingredients to prevent any lumps from forming.
  • Do not over bake the cookies. You want the centers soft. It is better to take them out a minute or two early than to over-bake.

Storing Leftover Chocolate Sheet Cake Cookies

If you are lucky enough to have leftovers of these cookies, here are some tips for storage success:

  • Allow cookies to fully cool before storing.
  • Store cookies in an airtight container at room temperature for up to 4 days.
  • If refrigerating, you can store them up to 5 days. The longer they are stored, the drier and harder they will become, so keep that in mind as fresh will be the best.
  • You can microwave the leftover cookies for about 10 seconds to warm back up.
