How to make Shortcut Texas Sheet Cake Cookies with Icing
- In a large bowl, combine the box chocolate cake mix, eggs, and oil.
- Stir to full combine, ensuring no clumps.
- Using a medium cookie dough scoop, scoop the cookies onto a parchment paper lined baking sheet.
- Bake cookies in a preheated oven, 350 degrees, for about 7-8 minutes.
- While cookies are baking, melt the butter in a small saucepan over medium heat.
- Whisk in the cocoa powder, milk, and powdered sugar until chocolate icing is smooth.
- Remove cookies from oven and move to a cooling rack.
- Place cooling racks on top of the parchment lined cookie sheets to easily catch the frosting run off.
- Spoon frosting over cookies and either eat immediately or wait until room temperature to allow frosting to set up. Enjoy!
Tips on making the Best Texas Sheetcake Cookies
- Do not over mix cookies. Only mix the batter until just combined. Over-mixing will leave the cookies dense, rubbery, and not at all as they should be.
- Use a cookie dough scoop to ensure each cookie is the same size. This will keep things baking evenly and prevent burning, overbaking, etc.
- The dough will be thick, that is okay, and the cookies will still turn out great!
- Whisk the cake mix before adding the wet ingredients to prevent any lumps from forming.
- Do not over bake the cookies. You want the centers soft. It is better to take them out a minute or two early than to over-bake.
